Parsley calculates the nutritional value for all your recipes, including USDA label (to the new, 2018 requirements), full ingredient list, allergens (as defined by the USDA and the EU), and dietary characteristics (vegetarian, vegan, gluten free, nut free, etc.). This is done in real time, meaning that as you enter the recipe, the nutritional information is being continuously updated, giving you immediate feedback on the effect of different ingredients and quantities on the dish's nutritional content.
Parsley calculates the nutritional values by using the USDA-sourced nutritional information in its standard ingredients, and in any ingredient that you copy from a standard ingredient. It then allows you to edit that information if any change is needed, and also lets you enter the nutritional information for any new ingredient you add that is not a copy of a standard ingredient. Using this information, it can calculate the nutritional values for any recipe. Below as an example is the nutritional information that we provide for Salted Almond Butter.
We work had to make sure the nutritional information, including dietary characteristics and allergens, for all the ingredients in our standard library are accurate. However, if you've added ingredients to that list, the accuracy of the nutritional information for any recipe that uses those ingredients depends on the accuracy of the information that you enter for those ingredients. In particular, please make sure that you enter the correct allergen information (this means making sure to flag if the ingredient contains any of the allergens in our standard list, including peanuts, tree nuts, wheat, etc). This will ensure that the allergen and dietary characteristics of your recipes are accurately reported. The screen shot below shows you the list of allergens and dietary characteristics.
